2 chopped onions4 garlic cloves, minced
21/2 lbs. lean ground turkey
4 ounces Italian turkey sausage
4 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamon
2 tablespoons unsweetened cocoa powder
two 8-ounce cans tomato sauce
1-2 cans kidney beans
1-2 cans pinto beans
1 tablespoon dark molasses
2 cans beef broth
2 tablespoons balsamic vinegar
1 can of beer (the alcohol evaporates during cooking)
Sauté onions and garlic. Add meat and sauté until it's no longer pink. Add remaining
ingredients and bring to a boil. Simmer for two hours. The lengthy simmering brings out the full
flavor of the spices in the chili. Makes 12 hefty servings.
