Gourmet Chili

  • 2 chopped onions
  • 4 garlic cloves, minced
  • 21/2 lbs. lean ground turkey
  • 4 ounces Italian turkey sausage
  • 4 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cardamon
  • 2 tablespoons unsweetened cocoa powder
  • two 8-ounce cans tomato sauce
  • 1-2 cans kidney beans
  • 1-2 cans pinto beans
  • 1 tablespoon dark molasses
  • 2 cans beef broth
  • 2 tablespoons balsamic vinegar
  • 1 can of beer (the alcohol evaporates during cooking)

    Sauté onions and garlic. Add meat and sauté until it's no longer pink. Add remaining ingredients and bring to a boil. Simmer for two hours. The lengthy simmering brings out the full flavor of the spices in the chili. Makes 12 hefty servings.
