Wheat-and Dairy-Free Corn Bread

Ingredients:

  • 1-1/3 cups cornmeal
  • 2/3 cup brown rice flour
  • 2 tablespoons soy powder (optional)
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg, slightly beaten
  • 1 tablespoon dark molasses
  • 2 tablespoons canola oil
  • 11/2 cups soy or rice beverage

Directions:

Preheat oven to 425 degrees. Place all the dry ingredients into a bowl. Add remaining ingredients and stir until moistened. Pour into an oiled 9″x9″ baking pan. Bake 20-25 minutes or until done. Serve hot.
